Best red wine to use: french onion soup?

So years ago I made a french onion soup from scratch. Family loved it. I lost the recipe but my mom recently came across it when doing some cleaning and they want me to make it again. I made some recipe notes but can’t remember what wine I used. All I know is a red wine was called for. I’m trying to decide whether to use Pinot noir, Cabernet Sauvignon or another kind. Any ideas? I’m also vegetarian now so will be using veg broth instead of beef, if that makes a difference. I know I used veg broth last time too because my note said.
