I've got way too much ricotta (Not Crumbled). What can I do with it all? It expires in three days. Can't do Spinach since I'm fresh out

Well... I could do spinach, but my birds eat spinach leaves, I don't want to hog it all. My spinach plants are also still growing, so they're not ready for harvest.
