I make this pork braised with chiles dish and quite enjoy it but I wanted try something a bit different, while still using pork. I've seen Birria popping up left and right lately and would like to give it a try though it is primarily beef or lamb based.
Tradition aside, is there any reason not to use pork shoulder for this dish? Is there anything you would change if you were to use pork? And can any of you point me to your favorite Birria with Consomé Recipe?
