So my Italian restaurant just closed and I have been left with tons of fresh basil, thyme and rosemary plus a ton of fresh produce like tomatoes, romaine, eggplant, squash and cucumber. What are some things I can make with this that can make these perishables into a dish that can possibly be frozen?

I'm a server btw. This question is not coming from an owner or chef. So I really need direction haha.
