I flipping love Mexican food, but living in the UK our options are frankly terrible, so aside from going to Mexico (which I do when I can, but that’s hardly regular) I have to make what I can with the ingredients I can get hold of.
One thing I see used quite a lot in Mexican recipes is chipotles in adobo sauce. Today I found some for sale in a little Mexican homewares shop in London so I bought a few.
I’ve already made a really good chipotle BBQ sauce, and I’ve found a recipe for enfrijoladas that looks pretty good, but I’m wondering if anyone more experienced with Mexican cooking could point me toward some great (preferably easy) recipes using them. I’d really like to try making a rich mole, could they be useful for that?
