Grandma's Spanish Rice!

Processing img xhmu6ec91aq41...

I have no idea if this is actual Spanish rice or not, so please don’t criticize, it’s just the name of a recipe that has been passed down from my great-great grandmother! It’s my all time favorite food, and figured I could share it with Reddit to enjoy during quarantine!

Ingredients

  • 1 cup dry rice
  • 2 cups water
  • 1 tbsp butter
  • dash of salt
  • 1 pound of cooked bacon (broken/chopped up)
  • 1 cup of diced onions
  • 1 quart of canned, diced tomatoes
  • dash of brown sugar
  • dash of Worcestershire sauce
  • 1/2 cup of chili sauce

Directions

  1. Cook 1 cup of dry rice and two cups of water until rice is cooked. Add dash of salt and 1 tbsp of butter while rice is cooking. Transfer cooked rice to a cooking dish for oven. Add tomatoes; stir.
  2. Cook onions in bacon grease at low temperature until transparent.
  3. Add bacon, onions, brown sugar, Worcestershire sauce, chili sauce, and mix.
  4. Put the mixture into oven for 1 hour at 350 degrees

Note: I do all the mixing in a mixing bowl, not in the dish I cook it in. That's just how my grandma does it :)

bon appetit
