I made an amazing macaroni & cheese

It's a mixture of several recipes I found online with some tweaks suggested by my mother, who makes amazing macaroni & cheese.

1.5 cup sharp cheddar, shredded

1 cup parmesan, shredded

1/2 cup cottage cheese

1 cup milk

1 tsp salt

1 tsp black pepper

1 tsp garlic powder

1 tsp onion powder

1/4 tsp paprika

1 tbsp butter

1 egg, beaten

2.5 cup macaroni

While the macaroni is cooking, mix together the cheeses, milk, and spices. Drain the pasta and toss in butter and beaten egg. Stir in other ingredients and cook on low while stirring for a few minutes until the cheeses all melt and it thickens a bit. Top with fresh thyme and serve.

It is absolutely delicious, the creamiest, most amazing macaroni and cheese I've ever tasted. I also made mac & cheese bites by scooping the leftovers into muffin tins and topping it with bread crumbs mixed with olive oil, then baking at 350 for half an hour. They were great finger foods and lunch additions!

bon appetit
