I just got back from visiting my parents for the holidays. It was great, warm weather and fantastic fishing. My dad sent me home with all the redfish 4 people caught over 2 weeks. Generous yes, but they are packed in 5, one gallon size zip locks, so when I thaw them out I'm going to have 4-6 cleaned fillets at hand. Any ideas besides blackened red fish, or thoughts for prepping freeze ahead meals? Freeze ahead blackened redfish? I don't want to let it go to waste.
