Fried Cod fish bathed in sweet tomato sauce

This is a traditional southern Italian recipe, mainly from the Campania region.

RECIPE: Fried cod fish bathed in sweet tomato sauce

INGREDIENTS:

  • 2 pieces of cod fish (roughly 200 gr / 7 Oz each), not frozen but from the fridge is fine.

  • 500 grams/17 oz Cherry tomatoes (these are important for taste as they are sweet)

  • Enough white flour to cover fish

  • 2 cloves Garlic

  • Fresh parsley, salt and pepper to taste.

DIRECTIONS:

  • In a big frying pan, throw in about 4-5 teaspoons olive oil and let warm enough to golden brown the garlic.

    • Throw in the chopped up garlic cloves and let simmer until golden brown.
    • Toss in halved tomatoes, parsley, salt and pepper and mix then let simmer on low until tomatoes soften and become a sauce. (about 15 minutes)
    • (OPTIONAL: If the tomatoes seem to be drying up, simply add a bit of water to the sauce, this is not common if cooked on low heat.)
    • While tomatoes cook, cover fish with flour on both sides and place in a separate smaller frying pan that has been heated with olive oil.
    • After about 10 minutes per side on medium heat, each side should form a golden brown crust. Flip sides and cook as needed.
    • Once fish has been cooked through, place it in frying pan with the tomato sauce, cook for roughly 10-15 minutes, covering the fish with spoonful’s of the sauce so it is absorbed into the fish.
    • After it’s done, serve with a nice side dish, I like mashed potatoes, I know it might not fit, but I love the contrast of taste.
