- 2 ripe bananas, mashed
- 3 tablespoons sugar
- 1 tablespoon orange juice concentrate 1 tablespoon vegan margarine, melted (I use Earth Balance) (Or use vegan oil of your choice.) 1 heaping tablespoon ground flax meal
- 1 teaspoon salt
- 1 teaspoon vanilla
- ½ teaspoon cinnamon (optional)
- 2 cups almond milk (or other non-dairy milk of your choice)
- 2 cups whole wheat flour (or 1 cup all purpose flour + 1 cup whole wheat)
- 1 tablespoon aluminum-free baking powder (I used Rumford brand.) (Or substitute with approximately 2 teaspoons of regular baking powder--although this is just my guess.)
- cooking spray (or oil of your choice)
