[Suggestions] I've never make chicken noodle. At a budget break-point and need to see what I can gather up.

So I've never made chicken noodle myself. I'm fine with slow cooking in a stovetop pot, I'd prefer that method. I recall my mother when I was young would buy chicken and boil it using the broth made in her actual soup.

What I've got: Tons of canned vegtables, plenty for the veggies I want in it.

A 4 pack of frozen chicken thighs.

Tons and tons of noodles.

My biggest question is what to do with the chicken. I've got a small amount of money to go grab some broth, but I'm at this break-point of the month where my funds are dwindled and I need to hold over till friday. I figure I could make a massive vat of chicken noodle soup as a good handful of meals.

Without getting fancy with herbs, do you guys have any suggestions for recepies which I could follow? I have a idea how I'll do this:

Boil the chicken thighs in chicken broth. Strain into a separate pot to ensure no bones or chunks of fat or similar fall in. Pull the meat from the chicken, cook together with onion and maybe celery.

Start the noodles and the veggies, stir in the now made broth / pulled chicken. Cook forever.

Is my logic sound? Fun fact: I rarely cook anything not pre-made. I'm the type with a handful of things I know how to make which I create regularly.

Any suggestions, links or written suggestions welcome!

bon appetit
