Citrus Fish Tacos - 15 min recipe

Ingredients

  • 1 cod fillet, frozen
  • 1 lemon
  • ½ container, 8 oz lite sour cream
  • 1 tomato
  • ½ bag red cabbage
  • ½ bag carrots shredded
  • 1 tablespoon olive oil

Equipment

  • Skillet
  • Knife and cutting board
  • Spoon or spatula
  • Mixing bowl

Instructions

  1. Dice the tomato and set aside.
  2. Slice 1 lemon in half.
  3. Heat a skillet to medium. Add 1 tablespoon of olive oil.
  4. Add 1 cod filet and 1/2 of a taco seasoning packet to the skillet. Cook for 3 minutes on each side. Turn off the heat.
  5. Add the juice of half of a lemon (catch the seeds in your hand and discard) to the skillet.
  6. Add 1/2 bag of red cabbage, 1/2 bag of shredded carrots, 1/2 container of sour cream, and 1/2 packet of taco seasoning to a mixing bowl. Stir to combine.
  7. Roughly dice the cod into bite-sized pieces.
  8. When ready to eat, fill 4-6 tacos (2 portions, 2-3 tacos each) with the cabbage mixture, diced tomatoes, and diced cod.
