Ingredients
- 1 cod fillet, frozen
- 1 lemon
- ½ container, 8 oz lite sour cream
- 1 tomato
- ½ bag red cabbage
- ½ bag carrots shredded
- 1 tablespoon olive oil
Equipment
- Skillet
- Knife and cutting board
- Spoon or spatula
- Mixing bowl
Instructions
- Dice the tomato and set aside.
- Slice 1 lemon in half.
- Heat a skillet to medium. Add 1 tablespoon of olive oil.
- Add 1 cod filet and 1/2 of a taco seasoning packet to the skillet. Cook for 3 minutes on each side. Turn off the heat.
- Add the juice of half of a lemon (catch the seeds in your hand and discard) to the skillet.
- Add 1/2 bag of red cabbage, 1/2 bag of shredded carrots, 1/2 container of sour cream, and 1/2 packet of taco seasoning to a mixing bowl. Stir to combine.
- Roughly dice the cod into bite-sized pieces.
- When ready to eat, fill 4-6 tacos (2 portions, 2-3 tacos each) with the cabbage mixture, diced tomatoes, and diced cod.
