I've been interested in experimenting with some odd cotton candy flavors, so I got a crappy cotton candy machine and I'm planning to play around with this recipe from ideasinfood.
I haven't tried this yet, and I don't expect it to be super straightforward, so I'll probably start with something cheaper, like bacon fat. It uses a product called glice to stabilize the fat.
Ingredients
- 200g isomalt
- 50g glucose
- 3g sucro
- 2g salt
- 90g foie fat
- 3g glice
Directions
- Combine isomalt, glucose, sucro and salt. Heat to 160C.
- In a separate pot, heat foie gras fat with glice to 50C.
- With both mixtures at the correct temperature, whisk the fat slowly into the sugar. Be very careful, as it will sputter.
- The result should be a foie gras caramel, which I imagine would be interesting enough in itself. Pour the hot sugar on a silpat to cool.
- You'll need a hard candy cotton candy machine. Heat it up for about ten minutes, then shut it off and place some chunks of foie caramel in the center basin. Turn it back on and the cotton candy should start flying.
