Hot Pepper Recipe

This is a rip off of the Hot Peppers that they have at Potbelly's for if you don't live near a branch.

Stage 1
Fresh Serrano Peppers
1 carrot
Piece of cauliflower
25/75 mix of water and wine vinegar
Onions and garlic
Dry oregano
Celery Seeds
Salt to taste
Bay leaf

First, cook the onions celery seeds and garlic in a little oil. Then put in carrots and peppers. Add the vinegar mixture and a bay leaf and cook it for 15 minutes, making sure that there is barely enough liquid to cover the vegetables. Then let it cool down and leave it overnight in the fridge. The next day get rid of the bay leaf, it's time for

Stage 2
Olives (I like the Iberia brand)
Canola oil Pepper

Take the pickled jalapenos and pour off half of the vinegar mixture. You can use this to pickle more carrots to make them spicy. Add olives, canola oil, and pepper. The reason you don't want to use olive oil is because it gets hard in the fridge.
