What are your favorite meat based recipes? With pork adobo sa gata.

I work for a butcher as a fishmonger but I also get to cook any meats we have in the department as samples for customers to taste. I have access to almost any kind of meat or seafood, and if I don't have it in my store, I can order it to arrive two days later.

So I'm wondering, what are your favorite meat based dishes that I can cook up. It doesn't have to be almost plain meat like a seasoned steak, it can be buried under loads of other things as well, just as long as it contains a meat product. Yesterday I did a crawfish boil, last week I did fried alligator, and an alligator stew. Like I said almost any meat, except for gamey things like venison and exotic birds.

This is my first time visiting this subreddit so I assume I need a recipe here. So here's what I cooked up today:

Pork adobo sa gata

  • 4lbs plain pork belly sliced into .5"x1" pieces

  • 2 white onions thin sliced

  • 1 cup minced garlic, you read that right

  • 4 bay leaves

  • Salt and Pepper

  • 2 cups apple cider vinegar

  • 1 cup soy sauce

  • 1 cup water

  • 3 cans of unsweetened coconut milk

  • 2 pints of whipping cream

  • White rice

  1. Coat pork belly slices liberally with salt and pepper. Combine in a large bowl with onion slices, garlic and bay leaves. Leave in refrigerator for 1 hour to marinate.
  2. Heat a skillet to 400 degrees (medium/high). Toss in pork mixture and stir occasionally until pork is a dark brown. Remove excess grease to allow the pork to gain a bit of char on the outside. Save this for later.
  3. Add vinegar and boil until only a thick paste is left at the bottom of the pan.
  4. Add soy sauce and one can of coconut milk. Return grease to skillet. Bring to a boil and simmer for 2 hours, adding another can of coconut milk every hour.
  5. Add two pints of whipping cream to the mixture, heat until thickened, serve hot over white rice.

Pork adobo is a very versatile dish that can be changed to cater to your tastes. Some people don't like coconut milk and more vinegar flavor, have at it. I found that there was a bit too much coconut flavor in mine, that's why I added the whipping cream.

This stuff is a heart attack waiting to happen. Remove as much grease as you want to, I added mine back in because, as a sample dish, I'm going for flavor and not healthy.
