I made an amazing chili recipe that I found on someone's food blog and now I can't find it anywhere. I wanted to make it again for my birthday next week and I'm kicking myself for not bookmarking it.
Here are the things about it that I remember:

The recipe I'm looking for was posted online at the person's website/blog at least 6 months ago but probably longer than that.

It was written sort of as an experiment with the guy (or gal) designing his perfect chili.

It had a fast option that took something like 2 hours and a slow option that was more like 6.

It was made in a Dutch oven not a slow cooker.

It had beans

It was very complex.

I ended up using short ribs but I believe a cheaper cut was recommended. Even so, it was definitely not ground beef!

The writer, either in the story or in the comments referenced the serious eats J. Kenji Lopez-Alt chili recipe but said he didn't think it was all that. He also referenced another recipe that he liked.
