Ingredients:
1 onion, diced
1/2 green bell pepper, diced
1 stalk celery, diced
3 cloves garlic, minced
1/2 lb. shrimp, peeled, deveined, and chopped
olive oil
1/2 C. shredded pepper jack cheese
1 Tbsp. Cajun seasoning (or more to taste)
salt and pepper to taste
Combine shrimp, Cajun seasoning, and salt and pepper in a bowl, mix to combine.
Preheat oven to 400°
Heat 1 Tbsp. olive oil in a saucepan over medium heat.
Add onion and cook until translucent. Add bell pepper, celery, and garlic, cooking until soft.
Add shrimp and cook until done, about 3-4 minutes. You do not want to over cook the shrimp. If it is a little under done it will finish in the oven.
Clean and remove stems from mushrooms.
Line a baking dish with foil and spray lightly with cooking spray. Place mushrooms in dish and bake for about 5 minutes. Remove from oven and let cool.
To a large bowl, add shrimp mix and cheese, combining thoroughly.
When mushrooms are cool enough, stuff each with the mixture. Top with additional cheese.
Cook in oven until cheese is melted, about 5-7 minutes.
