Orange & White Chocolate Cake

When you are looking for a change to the regular cheese cake or chocolate cake option that seems to be a regular choice for many people, try an Orange citrus cake instead. The full burst of whole Orange flavour mixed with the desiccated coconut provides a perfect balance to offset the sweetness of the Orange. White chocolate is swirled through the cake to provide the occasional subtle sweet burst to please the chocolate enthusiast. Topped with icing sugar provides a nice finish to a dense cake that is not overly sweet but full of flavour. A real crowd pleaser.

Ingredients:
• 2 large Oranges about 500g (use additional oranges if small)
• 1/3 cup Olive Oil
• 1 tsp Vanilla Extract
• 2 cups Plain Flour
• 1 1/2 tsp Baking Powder
• 1/2 tsp Bicarb Soda
• 1/2 cup Desiccated Coconut
• 1/8 tsp Salt
• 4 Eggs
• 1 1/2 cups Caster Sugar
• 200 g White Chocolate
• Icing Sugar to dust cake

Instructions:
1. Pre-heat a fan forced oven to 150°C (300°F).
2. Grease & line with baking paper one 22cm (9 inch) springform baking pan.
3. Cut the ends of each orange (with a small cut), then chop the oranges (including peel) into smaller chunks.
4. Add orange to a feed processor and process to a coarse puree.
5. Add olive oil and vanilla extract and process to mix through.
6. In a separate bowl, add plain flour, baking powder, bicarb soda, desiccated coconut and salt. Mix to combine.
7. In a separate large bowl add eggs and beat for about 3 minutes, using an electric beater, until light and fluffy.
8. Gradually add caster sugar while continuing to beat the eggs, Mix until fully combined.
9. In alternating batches, fold the flour mixture and the orange mixture into the egg mixture until just combined. Do not overmix.
10. Melt white chocolate in a microwave bowl and set microwave to 50% power and cook for 30 second intervals, until fully melted. Check chocolate after each 30 second interval.
11. Fold white chocolate through the cake mixture.
12. Pour / spoon mixture into baking pan, smooth the surface and bake in oven for 80-90 minutes or until a skewer inserted into the centre of the cake comes out clean.
13. Remove from oven and allow to cool in pan for about 10 minutes before turning out onto a wire rack to cool completely.
14. Dust with icing sugar before serving.
