Anyone know of recipes for a low potassium diet that can be reheated?
Hey all!
My grandma has been living off pre-processed foods for sometime. She is a type-2 diabetic, and just one step away from having to go on dialysis. As such, her doctor wants her to start a low potassium diet. I have a vague idea what that entails, but was hoping maybe this community would have some good recipes. It would be great if the meal could be reheated in the microwave or toaster oven. Grandma doesn’t use the stove so my family will be cooking the meals and delivering them to her.

How do you make your own deli turkey?
I love eating stuff like turkey club sandwiches or anything with sliced turkey. But I heard that processed deli meats are one of the worst things for you. I'm not sure how true this is but I don't want to find out in the future. So I've decided to attempt to make my own deli turkey but I don't know how to do that. Does anyone have any suggestions?

What can I use as a shell for home made ferrero Rochers?
I see loads of recipes online for them but theyre basically just a clump of chocolate with a hazelnut in the center, no crisp shell. I guess its just a wafer shell but where might I be able to find something similar? Doesnt have to be circular.

[Request] Ritz cracker Banana Pudding
An acquaintance of mine makes a large banana pudding once per year, but in this version the traditional Vanilla Wafer crackers are not used. Instead Ritz crackers are used, giving the dessert a salty sweet kick. My acquaintance is sworn to secrecy on the recipe. It has sliced bananas as the traditional dish would, and I have recently learned that one of the ingredients used in the early stages of preparation is Ice Cream, giving it the creamy flavor/texture. Other than Ritz Crackers, Banana slices, and Ice Cream we have no idea what goes into this dish or how it is prepared. If anyone has a similar recipe, please please please share.

Help! Need to find a way to "mimic" stone-ground cornmeal!
Imagine being from Texas and living in a world in which one can not find stone-ground cornmeal with which to make real Texas Honey Jalapeno cornbread.

I apologize for putting you through that, but that's the world I live in right now.
According to my understanding (which could be lacking), the major difference between stone-ground and regular (aside from the germ (most likely) being intact), is that the corn is not ground in a uniform way, leaving it more varied in shape and size, ranging from around grit sized, down to flour sized.
Now... Is there any way to "mimic" this by, perhaps, mixing various cornmeal grinds? If not, do you have any other suggestions? This is kind of important to me, as it has to do with my business.

Ideas for whole grain spelt?
I have a bag of spelt (the grain, not the flour). Does anyone have any favourite recipes for this? I’ve mainly been using it as a rice substitute, and it has such a lovely, nutty flavour. It seems like I could be doing more with it. Interesting salads or some kind of pilaff maybe? TIA!

Best way to extract flavor from fruit?
I'm curious as to which method is best when extracting fruits like papaya, strawberries, mango, apples, etc. In the past I've either boiled them in a pot with water, strain them, and let them cool. The other way is throwing fruit in a blender with water and straining afterwards. Which way is better to you think? Is there another way

Lilac and coconut muffins?
I have fresh lilacs in bloom, and a bag of shredded coconut. Any ideas how to go about making a nice batch of muffins with them? I don't want the coconut to be too fibrous, but I don't know what I'm doing. I've been fantasizing about this for a while with some other flowers, but they've dried up and died by now, and I believe that lilacs are all that I have left.

Middle eastern spiced rice
I went to a resturaunt a few days ago and had the most amazing kabob plate - I want to try recreating it at home, but Im struggling to find a recipe for the rice that sounds right. Theirs was spiced with some nutmeg-y cinnamon-y combination, and had no nuts or anything in it. Can anyone help me out?

Request: Meson Madrid's (Palisades Park, NJ) Chicken and Rice Recipe
Hey guys, didn't know where else to post this. I moved from NJ a while back and I think if I had to pick a single dish from a single restaurant that I miss the most, it would be Meson Madrid's Chicken and Rice. Their Caldo Gallego is really good too.
I've been on a quest to find a Chicken and Rice (and also a Caldo Gallego) that tastes even a fraction as spectacular as Meson Madrid's. At this point after having been disappointed again and again, I figure it'd be best to just cook it myself, but the recipes I've tried still don't come close.
Has anyone eaten there that knows of a comparable recipe for these dishes?

Falafel - homemade recipe
Description:
I’ll share with you this magic recipe of delicious falafel.
Pretty easy, with simple ingredients, but, with fantastic mix of spices and herbs!
This dish – is one of the favorite in my family.
Ingredients:

1 cup dried chickpeas
-
1 medium onion, finely chopped
-
3-4 gloves garlic, minced
-
3 tbsp chopped cilantro, parsley and mint
-
1 tsp salt
-
1 tsp cumin seeds
-
1/2 tsp coriander seeds
-
1 tsp ground black pepper
-
1/2 tsp cayenne pepper
-
1/4 tsp baking soda
-
1 tbsp flour
-
2 tbsp lemon juice
-
Sesame seeds
-
Sunflower oil for frying
Instructions:
-
Put chickpeas in a large bowl with water, beans will triple in volume as they are soaking.

Finely grind in food processor, but not purƩed. Add chopped onion, greens, garlic, flour and spices to the minced chickpeas.
-
Add lemon juice and baking soda. Cover with cling film and chill about 1-2 hours before frying.
-
Scoop out heaped tablespoon of the mixture and shape it into small patties.
-
In a deep stew-pot preheat oil up to 180°C or 350°F. Fry falafel in batches until browned and crispy.

Serve falafel hot or at room temperature with fresh vegetables, lettuce, pickles and pita. And don’t forget about fantastic combination falafel with hummus. Recipe you will find on the website. Try to mix yogurt with fresh cucumbers and sumac – perfect dip for falafel as well.

Best site for recipes?
I've tried recipes from a few different sites, but have often found myself disappointed. Allrecipes often leaves me disappointed despite the recipe being highly rated. I tried geniuskitchen, which I found to be alright. Theres also bbcgoodfood which doesn't have a lot of options but it has some decent recipes. Which sites have you had success with?

Herbed Yorkshire Pudding
You will need:
2 large eggs 2 heaped tbsp flour 1 tbsp chopped mixed herbs – I used rosemary, thyme and basil but you can use your favorite ones. 2/3 cup milk 2-3 tbsp olive oil grated Parmesan salt/pepper for sure also
Heat oven to 400 degrees F. Step 1: add egg and flour to a large bowl and whisk. Add herbs, milk, 1 tbsp oil, Parmesan, salt and pepper and whisk again.
Step 2: heat a 20cm/8 inch pan in 400 degree oven for 10 min. Remove from oven and add 1-2 tbsp olive oil and pour in batter.
Step 3: Bake in oven for 15 minutes at 400 degrees and then turn down to 375 for 15 minutes without opening oven. Once cooked remove from pan and sprinkle a bit more Parmesan to top and a drizzle of oil. Recipe with photos here

Best tomatoes for a sauce in the U.K.?
Hey. Wondering specifically if anyone from the uk could recommend a decent brand of tinned tomatoes to make a decent tomato sauce (for pasta etc) from?
I’ve tried a fair few but end up with a fairly bland or quite acidic sauce? Possibly just my lack of cooking skills š.
On a side bite anyone got a guaranteed good tomato sauce recipe? (As in for pasta etc rather than the condiment)

Request: Interesting liquid diet recipes
TLDR; Anyone have any ideas beyond store bought pudding, jello, and plain broth for a liquid diet?
My grandmother just had surgery and is on a liquid diet for two weeks, and, well, I’m trying not to make that completely boring for her. (Take note she’s a cool grandma. :) )
The primary restrictions and guidelines are: 1) protein intake is most important to focus on. 2) it must (hypothetically) be able to be drank through a straw (she doesn’t have to use a straw, just general guideline for consistency) 3) no fruits. Only fruit juices, even in smoothies. 4) no fiber rich vegetables, even purĆ©ed.
Worth noting that I do cook a lot so I’m able to execute most ideas. My initial thoughts include: -Smoothies and shakes (with Greek yogurt and 2% or almond milk for protein along with protein powder) - Blended potato leek soup -Frozen Greek yogurt -Adding nut butters for additional protein
Any additional ideas anyone?? (Especially on the savory side)

Those who work outdoors, or have an SO that does, what do your packed lunches look like?
My husband tends to be a picky eater, and has sensitive teeth. I am all out of ideas for healthful and tasty lunches to send him to work with, and would welcome recipe suggestions.
He does have access to a microwave and a George Foreman grill, but he typically does not take time to sit down and eat, just scarfs his food and keeps going.

Request : Looking for a pickle recipe (not one that is for half-sours or uses a small kirby cucumbers, but one to make the large sized pickle you'd find in a deli)
So I've been on the hunt for a recipe so I can make my own pickles. The pickle i'm trying to recreate is out there - I've purchased them out of a barrel in grocery stores or from behind the counter in sandwich shops. They're giant pickles and they aren't of the sour variety (new, half, full - nope). If anyone has any idea what I'm talking about and could steer me to a recipe, I would appreciate it. Everything I'm coming across in my google searches is for some type of a sour pickle.

Looking for a recipe for Pan Cubano bread - with a catch
I'm looking for a proper tested recipe for Pan Cubano that is based on weight, not volume. I really want to make a cubano at home in Delaware and spend the time doing everything right, but the main thing that I learned so far when looking into breadmaking is that measuring by weight (not volume) is the secret to success and consistency in the recipe. Unfortunately, the 3 or 4 recipes online are by volume. Also, the recipe must obviously contain lard, or it isn't Pan Cubano

Aligot recipe?
I am wanting to make aligot sometime soon and I have some questions. What is the best cheese to use? From what i’ve read tomme fraiche is a good one but i’m having trouble finding some in my area. Need help with today's food
So we're 5 days away from the monthly paycheck and there isn't all too much food left. But I want to do something with rice. We have a little bit of chicken, some halloumi cheese and some soy sausages. Not enough on their own to get us full but if I combine all 3 with some frozen vegetables we have I can make food for today and for lunch tomorrow. I just want a sauce type thing to have the chicken and all that in it and serve with rice.
Any ideas?

My mother has been planning my sister birthday. As she is getting older, she delegate task to everyone in the family. I got cooking duty.
The thing is, I need to prepare a meal thats going to be pleasing to both meat lover and vegan. We are going to be 8 people, 2 of which are vegan and 2 guys that consider that a meal without meat is just wrong.
I don't want to prep and cook two completely different meal so Im loooking for something that i can make a meat version and a vegan version with the same base.

Spices/Sauces to use with Salmon Steak Burgers? [QUESTION]
I use to cook a lot and one of my favorite recipes was salmon burgers, but I can't remember any spices or sauces I use to use, so I figured I'd ask here for recommendations! How I prepare this, is normally I cut a filet into bun-sized blocks of salmon, bake them for about 5 minutes, then throw them in a pan and fry them. Then I put them on a bun with some lettuce and tomato slices.
What spices would you recommend? I know chipotle mayo is a popular sauce with salmon patties, but I don't feel like it would fit this salmon burger, and I definitely didn't use it before. What should I use to caramelize the salmon? Algave? Salt, Pepper, and brown sugar?

A bit of a picky request, but I'm looking for freeze-ahead meals that (a) feed 1-2 people instead of a large family and (b) can be finished in a microwave, toaster oven, or stove top. You can imagine how google has failed me here, although I did find a few prospects!
My boyfriend loves home-cooked meals, but due to his very busy work schedule and the fact that we don't live together, he doesn't have much time to cook for himself and usually resorts to fast food or microwavable frozen food. I'd love to send him home with a few things that I can prepare at home and then freeze for him to reheat or finish cooking later. I have a full kitchen with many gadgets, so I'm not very limited on the pre-making side of things. He's limited to a stove top, microwave, and toaster oven. Bonus points if I can package these recipes in disposable containers, since it's likely I wouldn't see any of my good tupperware again if he took it home :P Thank you in advance if you have suggestions!
