Good recipe for pectin/gelatin jelly in rocky road?

Hi everyone my partner loves rocky road from the Noosa chocolate factory and in thrir rocky road they have this yummy pectin/gelatin based strawberry jelly. Does anyone have a good recipe for making a tart jelly for rocky road?
