I'm looking for the recipe used for the pizza pastellegos made on the island.
I have tried making my own with mozzarella and pizza sauce. I've also tried the ones made at Mama Empanadas. Neither come close to the ones made in Puerto Rico. They are like no others, with a very unique taste that I cannot pinpoint.
This filling used there is more like a creamy cheese/sauce mix. I tried to emulate it by melting mozzarella into some suave, but it came out too stringy, and of course the flavor was way off.
Does anyone know what I am talking about? Or better yet, any fellow Puerto Ricans who know how to make them on the island?
