Red Velvet Whoopie Pies

Ingredients

  1. 2 1/2 C Flour
  2. 1/3 C Cocoa
  3. 1/3 C Vegetable Oil
  4. 1 C Water
  5. 1 1/4 C Sugar
  6. 1/2 C Shortening
  7. 1/2 tsp Salt
  8. 1 tsp Vanilla
  9. 2 Eggs
  10. 2 tsp Baking Soda
  11. 2 Tbsp Red Food Coloring

Cream Cheese Icing

  1. 8 oz Cream Cheese
  2. 1/4 C Unsalted Butter
  3. 3 C Powdered Sugar
  4. 2 tsp Vanilla

Instructions

  1. Preheat Oven to 400°
  2. In a medium size bowl measure out the flour, cocoa, salt, and baking soda stir with a whisk
  3. In a large bowl combine the sugar and shortening and mix using an electric mixer
  4. Next add the eggs and mix until smooth
  5. Add the water, vegetable oil and vanilla
  6. Once the wet ingredients are combined start to add the dry ingredients one half at a time
  7. Scrape the bowl to incorporate everything
  8. Lastly add the red food coloring. Make sure that everything is mixed thoroughly. I used a spatula after I mixed with a mixer to make sure all the dye was incorporated.
  9. On a parchment lined cookie sheet or a sheet pan scoop out the batter. I used a 2” cookie scoop.
  10. Place in a 400° oven and bake for 8-9 minutes.
  11. Once cake has cooled create sandwiches.
  12. I put about 2 to 3 tablespoons of icing per whoopie pie
  13. This recipe will make 14-15 Whoopie Pies
  14. Cream Cheese Icing
  15. Cream together room temperature butter and cream cheese.
  16. Add the powdered sugar and vanilla and mix on med to high speed for 3 to 5 minutes.
