I mentioned this cake (with a side of vanilla ice cream and hot chocolate sauce) being our Chistmas eve dessert and was asked for the recipe. So here goes:
150 grams Butter 150 grams sugar (if you like it sweet you can go up to 200 grams) with a dash of salt and a small packet (ca 13 grams) of vanillin (vanilla sugar) 3 medium sized eggs 120 grams dark / cooking chocolate 350 grams zucchini (grated) 50 grams almonds (ground) 200 grams flour with one packet (ca 10 grams) baking soda
Oven at 180° Celsius
- Mix the butter until it's soft/ fluffy, add sugar, salt and vanillin, keep mixing
- Add eggs until the mass is smooth
- Add flour and mix until mass is a light color
- Break chocolate into bite-size chunks, put into pan with 2 Tbs of water and melt on low flame (constant stirring!)
- When chocolate mass is smooth add to the cake mass and mix
- Add almonds
- Remove mass from mixer. Add zucchini by stirring it into the mass with a big spoon or similar
- Greas cake form and pour mass in
- Bake at 180° celcius for ca. 55min Check inside of the cake with two toothpicks. The cake is ready when it's moist but not "liquidy/sticky". Let cool
