Looking for vegetarian dinner recipes.

Right now my SO and I typically eat red meat 1x a week, chicken 3x a week, and fish 2x a week. I'd really like to start incorporating vegetarian meals 1-2 nights a week but my SO swears he needs meat to feel full. Obviously he's dumb and needs protein, not meat. He doesn't like beans but he's open to trying some recipes. Any suggestions?
