I’m planning a special valentines dinner and need opinions on a potential recipe, please help.

So the idea is to make a sort of surf and turf with dry aged strip steak that’s cooked via Sous code and then finished on a charcoal and wood grill. On top of that would be lobster with lemon Aioli and caviar sprinkled on top. What do you think? Any suggestions?
