Fruity Cake

My mom created this recipe.

Fruit Cake Recipe:

Preheat oven to 350

INGREDIENTS

1/2 cup oil - canola/peanut/avocado

1.5 cups sugar

4 egg yolks

Mix together in separate bowl

2/3 to 1 cup yogurt (I used 1 cup but slightly too moist)

1 cup canned chunky pineapple, drained

2 bananas, sliced

1/2 tsp lemon extract

1 tsp vanilla

Mix together in separate bowl

3 egg whites - whipped in separate bowl

2 cups flour

½ tsp baking soda

½ tsp baking powder

1 tsp salt

1 tsp ceylon cinnamon

Mix together in separate bowl

1 cup blueberries

DIRECTIONS

Add ⅓ liquid to butter mixture, then ⅓ flour mixture, mix GENTLY and repeat until all together then fold in egg whites.

Butter & flour 2 baking cake pans

Cover bottom of each with thin layer cake then add ~½ cup blueberries then top with remaining batter.

Bake 350 degrees ~30-40 minutes

top with Cream Cheese Jam Frosting (yum!)

Cream Cheese Jam Frosting Recipe:

INGREDIENTS

3 oz cream cheese

2 Tbsp butter

3 Tbsp jam

¼ tsp lemon extract

⅛ tsp vanilla

1 cup powder sugar

DIRECTIONS

Blend together until smooth.

Recipe on line called for 3 cups powder sugar, but I only used 1 and it was good.
