Potato & carrot dumplings

Ingredients for this recipe: 4 large carrots 4 medium potatoes 2 cups either water or vegetable broth 1 egg Salt and pepper to taste Directions: grate potatoes & carrots together into a large colander Squeeze out all of the excess moisture In a large pot put the water/broth into & put into a slow simmer Squeeze/ press the potato/carrot mixture into either small or large balls with your hands, combine with the egg & then with a slotted spoon place gently into the simmering liquid. When they rise to the top their done, place them onto a plate covered by 2 paper towels (to sop up the excess liquid) sprinkle with salt and pepper to taste. Serve warm. Serves 3-6 people depending on the size of the dumplings and the appetite of the eaters. What do you think?
