For this thursday I ordered 3 big Dutch lobsters (Oosterschelde) from around 1 kg a piece. I have pretty much all the equipment in home (rohners, thermomix, dehydrators, paco jet) so I'm ready to go all the way again and cook something really nice.
Anyone who have some really nice and high quality (and challenging) recipes?
I was thinking about making a combination with beetroot (cooked, roasted and a vinaigrette) and a sauce with dashi in it. But I am looking for other options and maybe we can brainstorm some nice things together :) Will keep you updated and post the results this saturday if people are interested
