I love this dish! It's a Spanish staple! Although I'm not Spanish (I'm Portuguese) I eat this since my childhood because I live right next to Spain (Galiza). I'm seeing it right now right across the river! You will love it as much as I do!

Ingredients:
· 1 onion
· 6 eggs
· 3 Potatoes
· Olive oil
·Salt
Preparation:
· Slice the onion and potatoes at approximately 3 mm, then slice again in half
· In a pan put a good amount of olive oil
· Start by cooking the onion first, letting it gain some color (to give the sweetness)
· Then add the potatoes
· Cook at medium heat so it doesn't get crispy for about 15 minutes
· When the potatoes are cooked and soft add to a bowl
· Put the eggs in and mix (but not too much)
· Add salt, cover and leave to rest for 15 minutes
· After that, remove the olive oil from the pan
· Add mixture and cook in high heat for 1 minute, and then reduce to medium for 2 minutes
· Then use a plate to flip it over and slide it back to the pan
· Once again, cook in high heat for 1 minute and then reduce to medium and cook for more 2 minutes.
