Beef and Plantain Lasagna

This meat casserole is a comfort food that has a sweet flavor . This delicious beef and plantain lasagna recipe is not that easy to prepare but it is so worth it.

Ingredients

1 lb ground beef 4 to 5 very ripe (dark brown/black) plantain 1 tbsp paprika 1 tsp cumin salt and pepper to taste 1-2 tsp oregano, to taste 1 large onion, diced 1 green bell pepper seeded and chopped 2 garlic cloves, grated 4-5 medium sized tomatoes, chopped 2 eggs cheese optional oil for frying

  1. Brown ground beef In a large frying pan. Add the paprika, cumin, oregano, salt and pepper to taste.

  2. When the meat is done, remove it from the frying pan and set aside in another dish.

  3. Now add the chopped onion and the bell pepper to the frying pan. Saute them until the onions are translucent, and the peppers are soft.

  4. Add garlic and tomatoes. Stir and let it simmer for 15 min. Once the tomato mixture becomes saucy, put the cooked meat back into the frying pan. Cook for 5-10 minutes more. Taste and add more Seasoning if needed.

  5. Peel the plantains, and cut them lengthwise about 1/2 cm thick slices. Heat some oil in another frying pan. Carefully place them in the frying pan. Fry until they are brown on one side, then turn them and brown on the other side. Put on paper towel and set aside.

  6. Preheat the oven to 175°C / 350°F.

  7. Use half of the plantain slices into a 23×23 cm / 9×9” casserole dish. Pour one third of the meat sauce as the second layer; next comes another row of plantain then third of the beef- tomato sauce; then the remaining plantain slices topped with the remaining meat sauce. You should have about 4-5 rows.

  8. In a small bowl, slightly beat the eggs and pour over the casserole. Bake for 20 to 30 minutes. Serve hot or at room temperature. http://ift.tt/2cJU5Pw
