My homage to my mom's "little chicken"- soy sauce poached chicken wings

As young kids my bros and I loved when our mom made what we called "little chicken" cuz we didn't know any better. Her recipe is more simple than this, it was her "lazy day" meal. This is my suped up version:

Mom's Little Chicken

3lbs. chicken wings

3/4 cup low sodium soy (high quality)

3/4 cup chicken stock

1/4 cup rice cooking wine

4 cloves garlic, smashed

3 scallions, rough chop

1 inch knob ginger, cut into medallions

4 tbsp. brown sugar

1 tbsp. fresh ground black pepper

3 tbsp. sesame oil

1 tea. MSG (or 2 tbsp. fish sauce if unavailable)

1 tea. korean red pepper flake

Put all ingredients into a gallon ziploc and marinate in the fridge overnight up to 24 hours.

Throw everything into a large pot, bring to a boil, cover and reduce heat to low. Cook for 45 minutes, stirring occasionally.

Serve with white rice with the liquid poured on top. Enjoy!
