One Pot Pad Thai

This was really tasty! I doubled this recipe.

Boil water in a pot and then add 8oz Pad Thai rice noodles and let soak for 25-30 mins.
Drain noodles and place in a bowl and toss with 1 tbsp sesame oil and set aside.

Add ½ tbsp. sesame oil to pot and scramble to beaten eggs and remove from pot and set aside.

Add ½ tbsp. sesame oil to post and cook 1 diced chicken breast.

Remove chicken and add ¼ cup diced shallot to pot and cook in chicken breast juices.

Add noodles to pot with shallot and toss.

Add egg and chicken to pot and toss with noodles.

Add Sauce.

Sauce:
* 1/8 cup Fish Sauce
* 1/8 cup rice vinegar
* 1/8 cup soy sauce
* 1/8 cup brown sugar
* 1/8 cup lime juice
* 1/8 cup siracha

Toss into noodles:
* 1 cup Bean Sprouts
* ½ cup crushed peanuts
* ¼ cup green onions
* ¼ cup chopped cilantro
