Smoked Paprika Shrimp

This is a Spanish rice dish with some fantastic smoked paprika shrimp that really sends it over the top. It works very well.

Ingredients

  • 1 pound shrimp

  • 1 1/2 Tbsp. smoked paprika

  • 1 tsp. garlic powder

  • 2 Tbsp. oil

  • 1/2 tsp. cumin seeds

  • 1 onion sliced

  • 1/2 Tbsp. dried oregano

  • 1/2 tsp. saffron

  • 1 cups medium grained rice

  • 1/2 can diced tomatoes drained (save the liquid)

  • Salt & pepper

  • Water and tomato liquid to make 1 1/2 cups water

Directions

Place shrimp in a large enough bowl, add paprika, garlic powder and oil and let sit for at least half an hour.

Heat the oil in a saute or medium sauce pan and toast the cumin seeds.

Add the onion and cook until translucent, add the oregano and rice and saute until the rice becomes opaque.

Add the diced tomatoes, water/tomato liquid, and salt.

Bring to a boil, cover, and reduce heat to simmer for about 20 minutes.

When the rice is near done, pour the shrimp into a hot saute pan with a little more oil and cook for about 2-3 minutes per side.

Place the rice in a bowl and add the shrimp.
