Blueberry Coffee Cake

Ingredients:

  • Non-stick cooking spray

  • 1/4 cup light brown sugar

  • 1/2 teaspoon ground cinnamon

  • 2 teaspoons baking powder

  • 2 tablespoons butter, cut into small pieces

  • 2 eggs

  • 1 cup nonfat plain yogurt

  • 2 tablespoons plus 1 cup whole wheat pastry flour, divided

  • 1/4 teaspoon ground cardamom

  • 1/2 cup all-purpose flour

  • 1/4 cup sugar

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1 teaspoon vanilla extract

  • 2 cups fresh or frozen, thawed and drained blueberries, divided

  • 1/3 cup sliced almonds

Method:

  • Heat oven at 350°F, and with cooking spray grease a round cake pan. In a bowl put 2 tablespoon of whole wheat pastry flour, butter sugar, cardamom and cinnamon and mix with a spoon until mixed well.

  • Now put remaining whole wheat pastry flour, sugar, baking soda, salt and baking powder in a bowl and mix it well. Now in a medium bowl mix vanilla, eggs and yogurt with ingredients and mix until combined, and add 1 cup of blueberries.

  • Now pour all the batter into prepared cake pan over the top. Sprinkle remain blueberries and almond over batter and bake about 30-40 minutes until a toothpick inserted in the center comes out clean. After cooling it, loos edges of cake and transfer cake into a plate and cut it into slices.
