I don't often make soup, I've been wanting to create/find a really flavor filled and filling vegetable soup, so I put together this recipe:
- jasmine rice (with lime?)
- chicken stock (I don't have vegetable stock on hand)
- celery
- carrot
- garlic
- onion
spiced with:
- thyme
- basil
- salt
- pepper
Should I add tomatoes (sauce or diced?), broccoli/kale? am i missing anything important to a fulfilling soup? any recommendations before I try it out? I decided to use chicken stock and lime because i don't have lemon or vegetable stock on me and i think it would be good with the rice!
