Marinated Pork Roast - Delicious!

Marinated Pork Roast

1- 1 1/2kg of pork loin roast (or leg of pork)

For the marinade: 1 tbsp. of mustard 1 tbsp. of neutral oil 3 cloves of garlic, minced 1 tbsp. of freshly squeezed lemon juice some fresh thyme 1 tbsp. of Vegeta seasoning salt & pepper

For the marinade, mix the mustard, oil, garlic, lemon juice and fresh thyme. Add salt, pepper and Vegeta seasoning and mix well to combine. Rub the meat with the prepared marinade, put it in a large bowl and cover with a plastic wrap. Let it marinade for at least 4 hours. If you want a somewhat stronger flavour, allow it to marinate for 8-10 hours.

Preheat the oven to 200°C and slightly grease a roasting pan.

Transfer the meat into the prepared roasting pan and pour some water in it so that the meat doesn't burn or stick to the pan. Roast for about 30 minutes and then cover with a tin foil. Bake for another hour (or more, depending on the size of meat and the type of your oven). Every now and then check the meat and pour some of its juices over it so that it doesn't get all dry. When the meat is done, remove the foil and roast for another 10-15 minutes uncovered, until it gets that nice golden colour. Remove from the oven, allow it to cool a bit and cut into slices. Serve with boiled baby carrots or some other vegetables to your choice.
