Ingredients: 2 cups sugar 1 cup water 1/2 tsp. cream of tartar 1/2 cup Light corn syrup 1 tsp. Red food coloring (liquid or gel) 1/4 tsp. Vanilla extract (optional)
Deep pot so you can submerge the apple 4-6 medium size Apples Parchment paper Nonstick spray Sticks for Apples Crushed Candy: any candy can be used such as peanuts, coconut shavings etc. (optional) Candy thermometer (optional but helpful)
IMPORTANT: Most recipes do not tell you that the apples cannot be coated with wax! If you cannot find apples without, you can boil water and dip apples to remove. When they look dull they are good to go.
PREP: 1- pull out the stems, wash apples and dry. 2- pierce apples with stick about half way. 3-roll out a sheet of parchment paper and lightly coat with a non stick cooking spray.
MAKE IT: Mix all liquid ingredients into your pot. Stir a bit so it becomes a red liquid.
Turn on high heat with candy thermometer positioned in center of fluid level.
Do not mix it at all! Boil mixture until reaches hard crack (300ºF).
Tip: If you don't have a thermometer, when the bubbles start to look foamy, take a small amount out with a spoon and dip in cold water. If it hardens, your good to go.
Quickly immediately dip the apples, twisting to cover.
Roll the apple into the crushed peanuts (optional)
Set on parchment paper.
Refrigerate for 20-30 min.
One to two dips is plenty. Especially if you are making these for kids. Over dipping makes it difficult to bite through.
