For this potato soup slow cooking recipe would adding mexican chorizo instead of bacon be a viable and fast choice?

8 cups of chicken stock 3 lbs of potatoes diced 1 small white onion 3 cloves of garlic salt/pepper to taste (about one teaspoon)

Set on high for 4 hours, then add

2 cups heavy cream 1lb of cooked bacon 2 cups of shredded cheddar 1/2 cups diced green onions
