So what I hate about apple pie is the lack of flavor, overcooked apples don't impart much, masked by cheap cinnamon. Soft texture, cheap apples, too sweet, pie usually falls apart. It's crap. I can't stand it.
I am watching The Resident and there's a dude on here eating a slice of BEAUTIFUL apple pie. The apples are stacked way too high. The apples were white and distinct inside, not a brown amorphous sugar-saturated blob. I want this pie. I want this tart, flavorful delicious pie. A la mode.
I currently live in the Southern USA and I have never seen a good apple pie here. Also realizing people here generally don't seem have access to good big beautiful flavourful apples, so that could contribute to the sad pie scene. I am going to take a gamble and guess I don't hate apple pie, I just hate the standard execution, the general interpretation of what apple pie is. I've just never had an apple pie how it should be done.
Anyone have a recipe to help me out? I am going to make one myself. Usually a ruhbarb strawberry crumble type of person, but I need to get this apple pie bug out of my head. Desperate here.
