Hi friends!
I recently signed up for a local farmshare and receive a hefty box of vegetables and meat every other week. This weeks haul includes 2 pounds of bison meat, plenty of zucchini, fennel, and red onion. I have spinach and asparagus on hand as well, and some lovely truffle olive oil.
I was thinking about making bison meatballs with spinach and fennel pesto with asparagus over zoodles. Is that a thing? A good thing? I have never eaten bison or fennel before. I would normally try some bison bolognese with penne, but I am trying to cut down on my carbs as my body is covered with a layer of ravioli and a splash of red wine.
OR should I just make bison burgers because everyone seems to love them?
