Ingredients:
4 bell peppers, any color
1/2 red onion, chopped
3 cloves garlic, minced
1/2 lb. hot italian sausage
1/2 lb. ground pork
1/4 C. feta cheese, plus more for serving
1-1/2 C. spinach
1 tsp. each salt, dried basil, and dried parsley
1/2 tsp. pepper
1/4 tsp. each of dried marjoram, dill, and rosemary
2 Tbsp. olive oil
Preheat oven to 425°
Cut about 1/4″ off the tops of the bell peppers and scoop out the insides. Line a baking dish with foil and lightly spray with cooking spray. Drizzle each pepper with olive oil and sprinkle with salt. Bake for 20 minutes.
While peppers are cooking, prepare filling. Heat 2 Tbsp. olive oil over medium high heat and cook the onions until softened, about 10 minutes.
Add garlic and cook 30 seconds.
Add both meats and cook until done, making sure to break up the large chunks.
Add all the seasonings and cook another minute.
To a large bowl and all ingredients (except for the bell peppers) and stir to combine well.
Remove peppers from oven and let cool enough to handle. Stuff with mixture (mounding if needed) and bake an additional 15 minutes.
Top with crumbled feta (if desired) and serve.
