(Question) Baking that's best left overnight / for x days?

I'm a big fan of baking, especially for gifts, but for things like Christmas gifts, it's a little hectic to be baking a whole bunch of stuff the day before/the morning of.

Any recipes that can be made ahead of time for better results?
