Easy chicken recipes?

Tldr - What are some easy, and preferably somewhat basic, chicken recipes you guys have?

Background - I meal prep my work lunch for 5 days a week. So far I've only succeeded with crockpot hot BBQ chicken with a side of green beans, plus a prepackaged snack. I like it, but it's going to get old quick if I don't change it up.

I would like to keep using poultry as my main protein in for these preps. I have a crock pot, two cheap store bought burners, and a toaster oven. Currently I have so little kitchen space that I can only use one (or both burners) at a time.

I am a fledgling newbie at cooking. (Is it safe to cook chicken in the toaster oven? I have a digital meat thermometer.)
