Creamy White Chocolate Peppermint Ice Cream

White Chocolate Peppermint Ice Cream

INGREDIENTS

  • 1 ½ cups heavy cream, divided
  • 3 tablespoons nonfat milk powder
  • 1 cup chopped white chocolate or peppermint chunks
  • 1 ½ cups whole milk
  • ¾ cup granulated sugar
  • ⅛ teaspoon kosher salt
  • 6 large egg yolks
  • 1 teaspoon peppermint extract
  • 10–12 crushed peppermint candies or 4–5 crushed candy canes

INSTRUCTIONS

  1. Prepare White Chocolate: In a saucepan, bring ¾ cup heavy cream and 3 tablespoons nonfat milk powder to a simmer. In a separate bowl, place chopped white chocolate. Pour hot cream mixture over white chocolate and stir until melted and smooth. Set aside
  2. Prepare Ice Cream Base: In another small pot, simmer remaining ¾ cup heavy cream, milk, sugar and salt until sugar completely dissolves, about 5 minutes. Remove pot from heat. In a separate bowl, whisk egg yolks. Whisking constantly, slowly whisk about a third of the hot cream into the yolks to temper the eggs, then whisk the yolk mixture back into the pot with the cream. Return pot to medium-low heat and gently cook until mixture is thick enough to coat the back of a spoon (about 170º degrees F on an instant-read thermometer). Once ice cream base has come to temperature, remove from heat and stir in white chocolate mixture and peppermint extract. Strain ice cream base through a fine-mesh sieve into a clean bowl. Cover with plastic wrap and chill at least 4 hours or overnight
  3. Churn Ice Cream: Churn in an ice cream machine according to manufacturer’s instructions. About 2 minutes before ice cream has finished churning, slowly pour in crushed peppermint candies. Serve directly from the machine for soft serve, or store in freezer until needed

Recipe Request: Gyu-Kaku's Spicy Kalbi Soup

A restaurant chain makes an amazing soup that I would love to know how to make myself.... There doesn't seem to be a recipe online that matches what they serve.

Dutch mustard soup.

Lots of variation recipes on the net. Does anyone of a tried and true recipe that they recommend. Seems that the differences have to do with how the soup is thickened, potato, corn starch, egg yolk but its mostly a cream leek soup with mustard.

Does anyone know a good recipe for hot braised chicken? Seems impossible to find.

There are a handful of Chinese restaurants in my St. Louis area that make Hot Braised Chicken and for the life of me I can't find anything online recipe wise as to how this is made that isn't clearly very different.

I don't know if it's a regional dish that isn't super common for other Chinese restaurants across the country or what the deal is, but it's a very spicy chicken with a bit of sweet mixed in to make it bearable that has these whole peppers in there and is just the best Chinese food ever, but we've moved away and can't find it anywhere near here.

Anyone know a good recipe to try to make this at home? Searching online it's either like spicy braised wings or sweet fire chicken or something but none of the recipes seems right or looks right from the pictures and I can't find anything with the exact name/description/look that I've gotten from at least 3-4 STL Chinese restaurants.

Fondant Potatoes

Fondant potatoes are a concept I've only relatively recently become acquainted with. They make for an awesome accompaniment to a good steak. A little more complicated than your basic baked potato but if you're willing to do a little more work, the results are both attractive and delicious.. The recipe isn't too tough, but it can be a little confusing without the video here.

Ingredients

  • 5 medium yukon gold potatoes
  • 2 tbsp butter
  • a sprig of rosemary
  • 2 cloves crushed garlic
  • 1/2 cup chicken broth or stock
  • salt and pepper

Directions

  1. Preheat the oven to 450ºF
  2. Potatoes should be of a similar size, close to the size of a lemon. Peel them neatly from tip to tip to keep a nice shape.
  3. Slice off the narrowest tips on either side of each potato. Just remove enough to leave a flat and stable face.
  4. Slice those through the center, parallel to the flat faces and half way between. You should be left with chunks of potato shaped like a mesa.
  5. Warm some oil in a skillet. Cast iron is great for this. You need to be able to put the whole pan in the oven later.
  6. When the oil is heated to a shimmer, place the potatoes in the pan. Careful! That hot oil can splatter.
  7. When they're browned on one side, turn them over to brown the other side.
  8. Once the potatoes are browned on both sides, transfer to a paper towel to drain.
  9. Carefully pour the excess oil off into a safe container to cool before discarding.
  10. Return potatoes to pan and add the butter, rosemary and garlic. As the butter bubbles away, the rosemary and garlic will infuse it. Using a large spoon, baste the potatoes with some of this flavored butter.
  11. Add stock and return to the oven for 25 minutes.

Ingredients

  • 7 ounces of biscuits
  • 2 ounces of walnuts
  • ¼ cup melted butter
  • 1 pound sea buckthorn berries
  • 1 ½ cups of sugar
  • 2 tablespoons of gelatine
  • 1 teaspoon orange zest
  • 1 ½ cups of heavy whipping cream
  • ⅓ cup powdered sugar

Steps

  1. Add the biscuits, walnuts, and melted butter to a mixer bowl. Mix until even. Transfer to an 8-inch springform pan evenly spread it and press it gently.
  2. Add the sea buckthorn berries and sugar to a cooking pot over low heat. Stir them in, then simmer for 15 minutes. Remove from heat.
  3. Transfer them to a blender. Blend until smooth, then strain in a bowl. Discard the pulp and seeds.
  4. Add the gelatine and orange zest. Mix until even and set aside.
  5. Add the whipping cream to a bowl. Start whipping using a hand mixer. Add the powdered sugar in the process. Whip until firm.
  6. Add the buckthorn mixture and mix until even. Transfer to the springform pan and spread it evenly. Refrigerate for 6 - 7 hours.

Chicken thighs skewers

Another post made me think about it and I have some chicken thighs lying around. I wanna make some skewers from them to grill and I was wondering if somebody had some wonderful idea to marinade the thighs.

Strawberry Recipe?

Joe's candy pizza

  1. Use 1/2 cup of cheese spread.

  2. Combine 1 teaspoon vanilla, 1 cup of sugar, and 1/2 teaspoon salt in a medium saucepan.

  3. Bring to a boil, and simmer, covered, for 5-7 minutes.

  4. Remove from the heat.

  5. Let cool, and add 1 teaspoon liquid mozzarella.

  6. Use an oven mitt or rubber mallet to press the dough to a flat surface.

  7. Cut into 2″x2″ squares.

  8. Bake at 350F for 40-50 minutes.

Enjoy, and have more than enough ice cream for the next one.

So this is a long shot but I ordered steaks online which came with chicken breasts. They are marinated in some lime/cilantro mixture, the chicken is great, the mixture not at all. Anything I could soak the breasts in to remove it?

Attempting THE Sexy Filthy Mush by Meghan Markle

Ok, so I just attempted to make this recipe by Meghan Markle (still in the process actually). However, I did not manage to cook it for longer than a little over 2 hours, because the bottom was close to burning. Even though I scouped the whole thing around plenty of times. It's become so much that it also seems unhealthy to just scrape it off and stir it through...

The sauce is already a little brownish because of it (not burned or too much though) and all pictures I find on the interwebz aren't.

Apart from being out of oil so baking it in some margarine for baking... I don't think such a tiny thing would've been the problem, would it? Good to know: I simmered it in a good old Dutch pan. Not a Dutch oven but one of those your grandma uses to make meatballs in. Please halp!

I will update if it's still good, having just simmered for only half the amount of time...
