Super amazing egg and avocado toast! (microwave only)

So we only had a microwave at work for a looong time so I perfected this recipe for a variation of egg and avocado toast and wanted to share it with you!!

You will need

A cereal bowl

A fork & a sharp knife ( alternatively you can use just a knife )

A small plate

2 large eggs

2 tiny packets of pizza powder mozzarella

1 tiny packet of crushed red peppers

1/2 an avocado

1 slice of bread

2 slices of lunch meat

1 slice of cheese (if you got it)

  1. Crack the 2 eggs into the bowl & break the yokes with your fork, then add the crushed pepper and powdered mozzarella taking time to lightly beat the mixture inbetween each packet.

  2. Place in a 1200 watt microwave (or whatever you have) and cover with the small plate to keep the steam in.

  3. Microwave on high for 1 minute, stir the eggs to break up the cooking parts ( you gotta make sure it cooks evenly) and then replace cover and cook again for about 60 seconds stopping 30 seconds in to stir up the parts of the egg that are cooking only to resume cooking if they are not all set and cooked. (you are looking to have all the eggs set up into one round scrambled egg, you might need to adjust the details of the method to achieve a consistent outcome)

    1. Place your bread onto the warm plate & arrange your lunch meat on it in whatever way you find most appealing, setting the round scrambled egg on top of your meat pile (if you have sliced cheese, now's the time to set it on top of the egg)
  4. mash up your avocado and spread it on top of your egg, shake a generous amount of salt and pepper pepper pepper to finish it off.

  5. Consume your wonderful masterpiece, savoring not only the flavor, but the delirious glances from those around you.
