I've made this many times now and it's just an easy and filling meal especially if you're on your own for the night, &c. Use a frying pan that is safe to put in a hot oven.
- 4-5 strips of streaky bacon (that's normal bacon in the US), cut in 1" (25mm) pieces.
- 80g flour
- 180 ml milk
- 2 eggs
- Half an onion.
- salt to taste
Mix together the eggs, milk, flour and salt, and set aside. It's best to let this rest for at least 30 minutes. Fry up the bacon to whatever doneness you like, drain off all but about 2 tbsp of the fat. Remove the bacon from the pan. Add onions and fry them until they get a bit of colour. Stir the onions into the batter and get the frying pan nice and hot with he remaining fat in it. Pour the batter in the pan and then add the pieces of bacon in an even layer. You can also add some shredded cheese at this point if you want.
Place the pan in a 450F/230C oven for about 15 minutes
