(Question)Any ideas on how to brighten up breakfast hashes?

Hey everyone,I was wondering If anybody could reccomend some ingredients to brighten up the flavours of breakfast hash recipes.

I've been making hashes with potatoes,green peppers,mushrooms,eggs e.t.c but all the flavours are pretty heavy and the dish can be a bit greasy at times.Is there anything to help balance out these kinds of dishes?
