Chicken Fajita Casserole

Ingredients: 1 yellow onion, sliced 2 poblano peppers, chopped 2 red bell peppers, chopped 2-3 jalapeños, chopped 3/4 lb mexican cheese, like Oaxaca or chihuahua, grated About 8 flour tortillas 2 tbsp olive oil 1/2 inch stick of butter 1 cup Valentinas mexican hot sauce 2 tsp fajita seasoning for veggies 3 lbs fajita marinated chicken breast(from meat market) Salt/pepper

Directions: Preheat oven to 375. Grill fajitas on medium for about 5 min each side, then chop. Meanwhile, saute onion, and peppers in large skillet with oil and butter, add fajita seasoning while cooking, cook until veggies are tender. Toss veggies and chicken together in a large bowl. In a 9X13 casserole dish pour and spread some hot sauce on bottom of dish with basting brush. Add a 1/4 of the mixture and spread, then add two tortillas, lightly coat tortillas on both sides with hot sauce, sprinkle cheese on top. Continue layering until casserole is full ensuring two tortillas are on top with the remaining cheese, add more if necessary. Bake for 20 minutes. Enjoy :)
