Roasted Chicken with Sage, Lemon and Garlic

A nice roasted chicken that doesn't require a great deal of work to get ready and makes a great Sunday meal.

Ingredients

  • 1 large whole chicken, patted dry

  • 1 onion, quartered

  • 1 garlic head, cut in half

  • 1 lemon, zested and cut in half

  • 1/2 cup softened butter

  • 1/4 cup (or maybe a bit more) fresh sage, shredded

Directions

Preheat oven to 425F.

Add the quartered onion, garlic, 1/2 lemon, salt amd pepper to the cavity ion the chicken. Tie up the chicken legs to hold the "stuffing" in place.

Mix together the softened butter, half the lemon juice, lemon zest, and sage shreds. Spread this mix all over the top of the chicken. It does make a bit of a mess, but the butter melts very quickly once it's in the oven.

Bake for about half an hour at 425F and then reduce the oven to 350F, start checking at about an hour and as soon as the chicken has reached about 150 or so, you can pull it from the oven and let it sit for about 20 minutes before cutting it.
