(Pretty simple) Southwest Black Bean Bake

i got this recipe from Ortega and I'm posting their version because it's easy to prepare. I imagine there are better, more involved variations of this, but remember KISS: Keep It Simple dumbaSs.

Ingredients

2 cups cooked rice 1 jar (1 lb.) ORTEGA Salsa - Homestyle Recipe (Mild) 1 can (15.5-oz.) diced tomatoes, drained 1 can (15.5-oz.) black beans, rinsed and drained 1 can (4-oz.) ORTEGA Diced Green Chiles, drained 1 1/2 cup sour cream 1/4 cup sliced green onions 1 cup shredded Monterey Jack cheese 1 cup shredded cheddar cheese 1/2 cup crushed corn chips

Directions

PREHEAT oven to 350°F. Grease a 13x9-inch baking dish.

COMBINE rice, salsa, tomatoes, beans and chiles in large bowl. Add sour cream, green onions, and Monterey Jack cheese. Transfer to prepared baking dish. Top with cheddar cheese and corn chips.

BAKE for 25 minutes or until cheese is melted.

edit: I left out the sour cream, it was great.

bon appetit
